Fresh Tomato Soup

Tomato Soup is a very rich and creamy dish with smooth and buttery texture and little Sweet , Sour and spicy in taste. It can be made with fresh tomatoes or canned tomato puree. It is a very well known soup and easily available at any restaurant. It can also be easily prepared at home with a few ingredients that are normally always available at home . It can be made with variety of methods with the additional ingredients of your choice.

Here is a simple recipe of tomato soup made with fresh tomatoes ,carrots , cream and butter served with some croutons . Simple yet delicious and healthy . Lets get started.

Let’s have a look at Ingredients :

These are the ingredients needed for the tomato soup
  • Fresh Tomatoes – 6 to 7
  • Carrots – 2 Small Carrots
  • Onion – 1 Medium Size
  • Butter – 2 Tbsp
  • Oil – 1 Tbsp
  • Cream – 2 Tbsp
  • Garlic – 4 to 5 Cloves
  • Ginger – 1/2 Inch
  • Bayleaf – 1
  • Black Pepper corn -1/4 Tsp
  • Red Chilli Powder -1/4 Tsp
  • Turmeric Powder – 1 Pinch
  • Some Fresh Coriander Stems

Let’s start with the recipe :

  • Chop the tomatoes roughly (no specific size just cut into pieces ) .
  • Heat the pan and add 1 tbsp of oil and 2 tbsp of butter . Let the butter melt .
  • When the butter melts add onion and saute for a minute .
  • Add bayleaf , black pepper corn , garlic cloves and ginger and saute .
  • Add carrots and tomatoes and saute a little .
  • Add 1/4 tsp chilli powder and pinch of turmeric powder .
  • Mix everything well .
  • Add enough water so that the tomatoes are just immersed init completely (approximately 1 cup of water should be sufficient) .
  • Add coriander stems and little salt (as per taste) and stir to mix .Coriander stems helps to enhance the taste .
  • Cover with lid and cook till tomatoes gets mashed.It will take around 10 -15 minutes .
  • When the tomatoes are cooked and mushy switch off the flame and let the mixture cool down .
  • Once the mixture gets cooled, remove the bayleaf and transfer the remaining mixture into a mixi jar and make a fine puree out of it.
  • Strain this puree through strainer so that seeds and skin of the tomatoes get removed and mixture will become smooth in texture.
  • If the puree is a bit thick then add little water to adjust the consistency .Do not add more water or the puree would become runny and thin.
  • The puree should be little thicker .I have added 1 more cup of water after straining the puree.
  • Put the strained puree on to the gas and switch on the flame .
  • Add 1/4 tsp of crushed black pepper .
  • Add 2 tbsp of sugar .You can add any sugar (brown or white) .
  • Add some salt if required as we have added salt in previous step .
  • Mix it all together and allow it to boil for at list 15 to 20 minutes on low flame so all the ingredients mix well in the soup and incorporate their taste and soup gets smooth texture .
  • At last add 2 tbsp cream. Add cream little by little and mix well. Stir continuously while adding cream .
  • Switch off the flame right after adding the cream else will not get the smooth texture of soup .

Let’s make Croutons for the soup :

Croutons are nothing but small bread cubes shallow or deep fried in butter or olive oil until it get’s brown and crisp. You can also bake it in oven. Croutons helps to increase the taste and look of the soup. Here i am going to shallow fry these croutons.

  • Take off the bread sides and cut into small cubes .
  • Heat some butter in a pan .
  • Add these small cubes in a pan .
  • Fry until it turns to golden brown and crisp .

It’s time to Serve

Serve the soup while hot with adding some crisp croutons into it . Garnish with little cream on top and enjoy with garlic bread or sandwich or you can have as it is. Choice is yours but either way you will feel the same great taste and happiness.

Methi Mutter Malai

Methi Mutter Malai is a very flavourful and rich in texture North Indian recipe . It has a creamy texture and delicious taste.It’s a heavy dish as it contains cream, butter and cashew nuts and it will surely satisfies our taste buds. So once in a while we can treat ourselves with this rich creamy delight.

You can have this with any Indian bread like Paratha, Naan, Roti or Chapati.It’s a little thick gravy made with Onion, cashew nuts and curd with some fresh Methi (fenugreek )leaves and green pea’s along with Indian spices and cream. Here i am using dry peas which i have soaked in water overnight and boiled but i will recommend you to use fresh green pea’s if available.

If you or your kid’s don’t like to eat methi because of it’s little bitter taste then this is the perfect way to coverup the bitter taste. Do try this recipe and I am sure you will love it.

Let’s start with ingredients :

  • Fresh Methi (Fenugreek Leaves) -1 Cup
  • Green Pea’s – 1/2 Cup
  • Curd -1/2 Cup
  • Cream -1/2 Cup
  • Butter – 2 Tbsp
  • Oil – 2 Tbsp
  • Cashew – 18 -20 No. or handful
  • Onion -3 Medium Size
  • Garlic – 4-5 Cloves
  • Ginger -1 inch
  • Bayleaf -1
  • Cinnamon – 1 small stick
  • Black Cardamom – 1
  • Green Cardamom – 4-5
  • Black Pepper – 1 Tsp
  • Cumin seeds – 1 Tsp
  • Cumin Powder -1 Tsp
  • Coriander Powder -2 Tsp
  • Red Chilli Powder – 1 Tsp
  • Turmeric Powder – 1/2 Tsp
  • Kasuri Methi – 1 Tsp

Let’s Move on to Procedure :

Lets Start with Gravy

  • In a Pan Add 2 Cups of Water.
  • Add 1 Black Cardamom ,1 Inch of Ginger and 5-6 cloves of garlic
  • Add 3 roughly chopped onion and cashew and boil upto 15 to 20 minute (until the onion and cashew get’s soft) or pressure cook it and take one whistle.
  • Once the Onion and Cashew has been cooked properly remove it from gas and strain the mixture to remove the excessive water.
  • Take off the Black Cardamom and transfer the remaining ingredients into chutney jar
  • Add 1/2 cup curd into this and make a smooth paste out of this.
  • Heat the Pan.
  • Add 2 tbsp Oil.
  • Add 4-5 green cardamom.
  • Add 1 Tsp Cumin seeds.
  • Add 1 small stick Cinnamon.
  • Add Bayleaf and saute a little.
  • Add the paste of Onion,Cashew and Curd which we have made earlier and stir for some time on low flame.
  • Add all the spices like turmeric powder ,red chilli powder , cumin powder and coriander powder
  • Add 1 Tbsp Butter
  • Add salt for taste and little water and mix all ingredients well
  • Cook this curry for minimum 15 minute so that taste of all ingredients incorporates well into curry
  • Heat other kadhai and add 1 Tbsp Butter
  • Add 1 cup chopped methi(fenugreek) in butter and saute a little.
  • Add 1/2 cup boiled green peas and mix well.
  • Into methi and mutter mixture add Curry which we have prepared already.
  • Mix everything together and cook for another 5 minute .Adjust the consistency by adding little water if gravy is too thick.
  • Add 1/2 cup cream and mix well
  • Once the cream has been added switch off the flame immediately.
  • At last add some kasuri methi and mix it.

Serve hot with any Indian bread of your choice like Naan , Roti , Paratha or Chapati.

Veg Fried Rice

Veg Fried Rice

Fried Rice is one of the most famous Chines dish. Fried rice is made by stir frying rice (fry the rice in a small amount but very hot oil ) with different ingredients such as vegetables , Chicken, egg or meat and different sauces like soya sauce, Szechuan sauce and different oils like vegetable oils, olive oils or sesame oil. Here i am sharing basic vegetable fried rice recipe. There is no specific method to prepare this dish , you can improvise as per your liking.

To make fried rice use Non-sticky rice. Best choice would be a “Basmati rice”. You can use leftover rice or keep freshly cooked rice in a fridge at list for a hour for best result.

This is simple and quick recipe.I am very sure this recipe will give you a best taste and good satisfaction in your rush time or busy day.

So Let’s Start cooking.

Let’s have a look at ingredients:

Ingredients
  • Cooked Rice -2 Cup
  • Cabbage -1/4 Cup
  • Onion – 2 Tbsp
  • Beans – 2 Tbsp
  • Corn – 2Tbsp
  • Green Peas – 2Tbsp
  • Spring Onion – 2 Tbsp
  • Carrots – 2 Tbsp
  • Ginger (finely chopped) – 2 Tsp
  • Garlic (finely chopped) – 1Tsp
  • Oil -2 Tbsp
  • Soya Sauce -2 Tbsp
  • Vinegar -1 Tbsp
  • White Pepper Powder 1/2 Tsp
  • Sugar – 1/2 Tsp
  • Salt – as per taste

You can add any vegetables of your choice. and if you want some spice in your rice also add green chillies as well. Here, i have not used any green chillies.

Let’s get started with making Fried Rice:

  • Heat the pan or kadhai.
  • Add 2 Tbsp oil in it.
  • Add Ginger and garlic
  • Saute for a minute
  • Add Onion and saute for few seconds
  • Then Add 2 Tbsp corn
  • Add 2 Tbsp Green Peas
  • Add 2 Tbsp Beans
  • Add 2 Tbsp Carrot
  • Add 1/4 Cup cabbage
  • Add some salt
  • Saute and fry for a minute.

Don’t overCook the vegetables. We need crunch in it.So, just fry for 2 to 3 minutes on very high flame. Keep the flame high throughout the recipe for proper taste . Most important thing don’t add sauce on the vegetables. It will mess up the colour of veggies.

  • Add 2 Cups of cooked rice in a fried vegetables
  • Add 2 Tbsp Soya sauce
  • Add 1 Tbsp Vinegar
  • Add 1/2 Tsp white pepper powder
  • Add 1/2 Tsp Sugar (though sugar is optional i would suggest to add Sugar as it helps to caramelise the rice grains so that you can get nice nutty flavour.)
  • Add pinch of salt (don’t add too much as soya sauce contains salt so add accordingly)
  • Mix everything together on a high flame
  • At last add chopped spring onion, mix it and fry for a minute.
  • Your Fried Rice is ready .

Dabeli

kacchi Dabeli

Dabeli mainly originated in Kutch region of Gujrat. It is popularly known as “Kacchi Dabeli” or “Katchi Dabeli”. It is a famous street food of India specially in Gujrat and Maharashtra. Basically Dabeli is spicy ,sweet and tangy bun ( called “Ladi Paav” ) stuffed with boiled potato mixture made by using special dabeli masala and served with red chilli-garlic and sweet tamarind chutney followed by finely diced onion and masala peanuts. Assemble all the ingredients into the bun and roast it nicely with some butter and garnished with sev( Indian snack made with gram-flour vermicelli) and pomegranate.

This recipe is a little bit lengthy as I have prepared all ingredients at home except ” Buns and Sev ” .If you want you can buy readymade dabeli masala ,masala peanuts from market.

Let’s have a look at Ingredients :

Dabeli consits of these ingrediants:

  • Red Chilli-Garlic Chutney
  • Sweet Tamarind Chutney
  • Special Dabeli Masala
  • Spicy potato filling
  • Masala Peanuts
  • Finely chopped onion
  • Some coriander leaves
  • Sev
  • Bun (Ladi Paav)

Let’s start by making Red Chilli-Garlic Chutney :

  • Soak 10- 12 Dry red chillies into the water at least half an hour.
  • After half an hour remove all water.
  • Add 12 to 14 garlic cloves into it.Add 1tsp of cumin powder.
  • Add some salt.
  • Put all the above ingredients into the mixture jar and grind it in a fine paste .Add very little water if required .If you do not want chutney more spicy remove the chilly seeds before soaking into the water.
Chilli -Garlic Chutney

And here your spicy garlic chutney is ready.

Let’s make sweet Tamarind Chutney :

  • Soak 1small size of bowl (as shown in the picture) of tamarind into a hot water at list for 20 -30 mins.
  • After 30 mins. remove the water and grind a soaked tamarind and make a fine paste.
  • Strain the pulp so that hard part of tamarind will be out and you will get a smooth paste. We want only this part which easily gets strained through strainer. While straining keep on adding some water slowly.
  • The final product after grinding and straining the tamarind paste is ready (see above picture).
  • Now put the tamarind mixture on gas . Switch on the flame.Add 1 cup Jaggery into this.
  • Add 1/2 tsp cumin powder.
  • Add 1 tsp red cilli powder.
  • Add some pink salt or “sendha namak” as per Taste.
  • Mix all the ingredients.and allow it to boil for 8-10 mins.
  • When mixture gets boiled slow down the flame and keep stirring in between and keep boiling until mixture get little thicken.
  • Once the chutney is ready you can see the smooth velvety glaze on top of mixture, this is the sign of chutney is ready or you can check with the one string consistency (take small amount of mixture on spoon let it cool down for a second then deep tip of finger into it and press with thumb 2-3 times if string is formed then mixture has reached to one string consistency.)
Tamarind Chutney

Let it cool down and enjoy this tangy chutney with your favourite snack.

Let’s make Dabeli Masala :

Dabeli Masala Ingredients

To make Dabeli masala we need the below ingredients:

  • 1tbsp -Coriander seeds
  • 1 – bay leaf
  • 1/2tbsp – cumin seeds
  • 1/2tbsp- fennel seeds
  • 2tbsp – dry coconut
  • 4 – cloves
  • 1tsp – black pepper corn
  • 1 – black cardamom
  • 1 small – cinnamon stick
  • 1/2tsp – aamchur powder
  • 1tsp – black salt
  • 1tbsp – red chilli powder
  • 4-5 – dry red chilli
  • pinch of turmeric powder
  • 2 tbsp – powder sugar
  • 1tbsp – sesame seeds

we can dry roast all the above ingredients except powdered sugar and coarsely grind it in a mixi jar.Roast sesame seeds separately as it gets burnt easily.

Dabeli Masala

Dabeli masala is ready.

Let’s Make Spicy Potato Mixture for Dabeli :

  • Take 4 medium size potatoes.Boil and peal them.
  • Grate these potatoes so mixture doesn’t have any lumps.Mixture should be creamy
  • Add 1 tbsp oil in a pan or Kadhai.
  • Add 1 tbsp of the dabeli masala we preprared before (or depending on your spicy level you can adjust the quantity of dabeli masala ).
  • Add mashed potato into it. Add little salt and mix well.
  • Mixture is ready .

Just transfer it into a another bowl and lets garnish with some Dry coconut,Fresh coriander and pomegranate. As shown in the picture above.

Let’s Make Masala Peanuts:

To make masala peanuts :

  • Take some roasted and pealed peanuts.
  • Add 1/2 tsp of dabeli masala or if you want you can add regular red chilli powder.
  • Add 1/2 tsp of powdered sugar.
  • Pinch of salt.
  • Drizzle some oil on it.
  • Mix well and you are ready to go.

Now everything is ready.It’s time to assemble Dabeli :

Let’s fill all the ingredients into the bun :

  • Take Fresh Buns “Laadi Pav” as per quantity you need.
  • Cut them from inside .Do not make two parts of bun.Just make a little slice on white side of bun and make a small well into which we can fill all the masala.
  • First apply Sweet Tamarind Chutney which we have prepared earlier on the bun’s inside.
  • Apply Chilli-Garlic Chutney.(Add less or more as per your taste).
  • Add spoonful of potato mixture.
  • Add some finely chopped onion.
  • Add some masala peanuts. Use the above ingredients such that the bun is filled to half size only.
  • Again repeat the procedure to fill the remaining half part of the bun.
  • Final layer should be potato mixture so that it helps to seal all the ingredients into the bun and doest’t come-out while roasting.

Let’s Roast the Dabelies:

  • Heat the pan
  • Add some butter.
  • Put the buns filled with ingredients (done in previous step) in the pan.
  • Roast on a low to medium flame till it gets nice golden brown colours on both the sides and becomes crispy.(flame should not be very high otherwise buns get burnt and you will not get the proper crunchiness).
  • Press gently while roasting with the help of spatula.

When it turn into golden brown and get proper crunch then remove from the pan and deep into the “Sev” (gram-flour vermicelli’s). It will enhance the look as well as taste of dabeli and garnish with some pomeogranate .
